Ingredients:
Beerakaya/
Ridge gourd – 1 big
Green
chilies – 5
Garlic pods
– 3
Tomato – 1
big
Jeera/Cumin – ½
tsp
Tamarind –
small piece
Turmeric -
pinch
Salt
Oil
Seasoning:
Onion - 1
medium diced
Mustard – ¼
tsp
Urad dal - ¼
tsp
Red chili -
1
Curry leaves
– 5
Oil
Preparation:
- Peel the ridge gourd and chop into pieces.
- Heat oil in a kadai; add jeera, garlic pods and green chilies and sauté for 2 min.
- Then add ridge gourd pieces and turmeric and fry for a minute.
- Now add diced tomato. Sauté till the tomatoes become mushy.
- Add tamarind and turn off the flame. Let the mixture cool down.
- Grind the mixture with tamarind and salt.
Seasoning:
- Heat oil in a sauce pan; add mustard, urad dal and red chili and fry for a min.
- Add onions and curry leaves and sauté till onions become translucent.
- Add this seasoning over chutney and serve with hot rice.
